makes it hard to get on the brakes with a yolk in my knee.

I have never had that problem. If your legs get in the way of the controls maybe you need to adjust your seat. Bugs me a lot more when someone doesn't correct for the crosswind and we get blown all over the place

Flapping rudder pedals during takeoff in an effort to not lose a milimeter of centerline. Your getting bonus points for smoothness not whether you can keep the airplane pointed in the right direction to the milimeter. These are usually the guys and gals that manhandle the airplane during calm conditions.

I'm going to guess all of your flying has been in nosewheel aircraft. Congrats. You can flap the pedals all you want in the RJ, and the ride will still be smooth for the pax. BTW, we're not getting any points for smoothness be it takeoff or landing. F/O bonus points don't spend well in the bar anyway.
