For aviation novels, anything by Gann, or John J Nance. (Yes, the ABC news aviation "expert"). He's a former TWA capt that writes some very technically correct novels. A couple where turned into TV movies that where pretty accurate down to checklists, radio calls, and even the correct LOC freq into LHR.

Otherwise, "Coffee, Tea, or Me?" out of the 60's, but it is a look at how the job should be.

I just finished "Mavericks of the Sky". It goes into detail about the start of the Airmail service by the US postal service from 1916-1919. Some really amazing stories!! Great read.
