I substitute teach on the side.
Each state has different requirements, but most are ___ hours of college after your HS Diploma. For example, MO is 60 semester hours of college after Diploma, which is typical.
When I lived in GA, you had to have a diploma and "SOME" (read-1 class at a tech college) college. WI is a 4-year degree.
When you are qualified to sub, as in above, you can do any subject. I do K-12, all subjects, for example: Japanese, Physics, some advanced Math classes I don't even know the name for, Choir, Special Ed, etc.
Where I live it pays about $100/day. Last year in STL it paid about $85/day.
The pay rates change by school district, and you call ea. district to get a sub coordinator to get on their lists.
You can generally tell them the days you're available, and they'll call you then if they need you. They sometimes set up days in advance if they know your schedule.

PS-I love Grade 3, HS girls, and Grades 10-12. My least favorite is Kindergarten, G9 boys, and Grade 7, in that order.
