I was jumpseating a while back , while introducing myself and talking shop, I noticed that the FMA window said something other than TAK OFF prior to departure. We got off on a tangent and I forgot to ask why? Maybe it was changed sometime after I left the cockpit?

Most likely, they'd just not hit the TOGA buttons after turning on the FD's initially or to reset the FD modes in the roll & pitch windows to TAK OFF/TAK OFF after the previous landing.
 
That is correct. The Toga button is hit usually after engine start during the captain's before takeoff flow. It sounds like you are used to seeing it pressed before that? Different strokes, I presume.
