As a Part 121 pilot can I flight instruct outside of work? Does this flight time instructing count against my 30/7 with the airline. What if I do not charge for the flight instruction?

(assuming you hold appropriate faa flight instructor quals)I believe it is a company specific topic. some do allow this some don't. It does count as commercial flying and can cause problems as such with required rest periods. beyond this all I can say is check with your CP or POI
 
I second Beernuts comments. It is commercial time and can cause legality problems, especially if you are at an airline that runs 90 or 95 hour a month.
 
Your flight instructor time counts toward your total commercial flying. 30/7, 100/mon and 1,000/yr totals are impacted by any outside commercial flying. For this reason many carriers specifically prohibit any outside flying, others usually require notification or permission.

Rest periods apply to your 121 carrier. If you are permitted, you can do outside flying on your days off and still be legal, even though you may be flying 10 consecutive days without a 24 hour break.

I know exactly nothing about 121 operations and hours. However, if you do not charge for your flight instruction, then you are not by definition a commercial operation. For lack of a better term, you are flying purley for recreational purposes.

CFI's can log up to 8 hours of instruction within a 24 hour period. There is no 30/7 rule for Part 61/141 instruction. Again, I don't know if that changes for you 121 pilots.

We're talking about logging time, correct? If you flew your own plane to and from work I don't think that time would be counted against your 30 hour maximum, correct?
