All you'll need for class is the usual pens, paper, a pencil, notebook, calculator and a couple of highlighters.
Once you get in the sim, get a Telex 750. For SOE, you'll want the redbook to keep your times, a couple of calculators, pretty much all the stuff Tim said.
As far as flight bag, you could buy a casket from a funeral home for a kit bag and it will fit in the Dash cockpit. Anything ou can get within reason will fit.
Stay away from the company Travelpro bag. It sucks! Also, DO NOT buy the uniform shirts from Cintas. They're crappy and won't last long. Get some from an online pilot shop.

I bought a flight bag before class. I bought the 60 dollar vinyl bag from crewgear.com. It's held up really well. I also have the PNS Stealth rollaboard and it's the shizznit. It's expensive but fits in the overhead and holds lots of crap. I bought a new Sennheiser ANR headseat and I put it in a plastic tupperware container so it doesn't get banged up. I have a mini maglight that I never use, but have it just in case. I threw a couple of pens in and a highlighter because I'm an idiot and sometimes I'll mark stuff on Jepps that I would normally forget. Then I stopped buying stuff because my credit card was about to melt.
