My family is huge on smoking some good ole' Texas Style Bar B Que. A few of us compete at the Montgomery County Fair, & Houston Livestock Show & Rodeo. While I’m sworn to secrecy, I'm interested to hear other Texan's rubs; tenderizing procedures, wood preferences etc.

How about one from Wisconsin? I can't tell you the rub recipe. My Grandma would kill me. Try moistening the brisket with beer, add your rub and let it stand in the fridge overnight. For smoking, try applewood and oak. Really good if you're bored with hickory or mesquite!

I smoke my briskets an average of 18 hours with a mixture of mesquite and oak, occasionally pecan. Rub em down with real mayo and apply rub generously. happy eatin!!

Love the new avatar man. I dropped the hammer on a couple of the tasty beasts last weekend with a 45/70.

Oh yeah, hands down, pecan wood is the best for smoking.
 
People in Texas still dont know what real barbeque is.....

I guess I have never tried smoking brisket.

So tell me, where do you get papers that big? :eek:
 
If you don't mind the colored ink you can use the USA Today!

It's really the second-hand smoke that's bad for you!
