Been there many times and it is still one of my most favorite places to frequent. Vegas is unique in more ways than one and whatever happens in Vegas stays in Vegas.
Sahara is not a great hotel but not a bad hotel for the money, ended up spending a night there a few months back due to a convention at Mandalay Bay which prevented me from spending my entire stay at the Bay. I suggest trying to break away from Sahara and spending atleast one night at either Mandalay Bay or Bellagio, both are very nice hotels and lot's of stuff to do at both.
Good restaurants....
Top of the World Restaurant and Lounge at Carl Icahn's Stratosphere casino Hotel is very good and the view is pretty impressive as well. Wine list is also nice... The place moves 360 very slowly so you get a view from all sides.
Rosewood Grille on the strip has some fabulous lobster if you are into that, probably the best I have had in vegas.
Picasso’s at Bellagio is also a top notch place, great water show as well while you dine. These three are on the top of my list everytime I go there.
Emril's New Orleans Fish House at the MGM Grand is also worth a visit.
If you have the chance rent a car and head down to Laughlin Nevada, only about an hour or so drive from Vegas and it is right on the Colorado river and plenty to do. The Colorado Belle Casino is a pretty unique place and if you get a chance rent a jet ski on the river and have some fun.

After a few days on the strip I will rent a car and escape the city for a few days since Laughlin is not nearly as crowded as the strip and allows for some privacy.
Golfing...
Vegas National is a pretty nice course. If you saw the movie ''Casino" then the house that is on the left side of the 16th should ring a bell..
Most all the courses I play there are nice, you can usually get a price break after 2pm if you can take the heat.
