Also, remember that even though "you can't log it," you CAN log ANYTHING you want to in your logbook as long as your not trying to prove that time as required time for an FAA license or requirement.

Not true. Your logbook is a legal document, and falsifying it can get you in all kinds of trouble even if you're not going for a rating. Do you sign the little signature line that says that you certify that those entries are true? There ya go.
 
per multiple FAA Disignated Examiners, in the King Air scenario you can have a sperate column with "Unofficial SIC" time or something of that sort and show that as experience. Can you log that time when you weren't sole manipulator as flight time, NO, but you CAN have a column in your log book that shows that you were flying along side the captian and building EXPERIENCE.
