Being from the south I’ve had my share of cornbread and I’d like to draw upon the cultured crowd here to chime in on this issue.

First off the type of cornbread, what is your favorite?
Crackling or Mexican, how about Maque Choux Cornbread
What goes well with cornbread and is it palatable with BBQ, which I am quite fond of myself!

My fav is fried rabbit and gravy, with a mess of collards and cornbread. Oh man is that awesome!!!

Oh yea…next time you're through Nashville, stop off at the Sportsman's Grill and get their "barbecue on cornbread".

Come on world travelers let’s hear it!

:p

Rule One, Sugar doesn't belong in corn bread.

Rule Two, only a iron skillet can be used to make cornbread.

Rule Three, cornbread goes with anything.

I add a few sprigs of fresh cilantro(chopped) and a dash of both comino and black pepper to my batter. Marvelous.

enjoy,
enigma

PS, Yesterdays cornbread in a glass of milk is better than post tosties

o wait.. you mean, you've never seen the ocean before?? LOL ... but i wouldnt trade living in the bay area for life in alabama...

Wow... someone needs to look at a map... Gulf Shores=gorgeous white sand beaches with plenty of space.. in ALABAMA

wait... i didnt think ocean and gulf were the same thing..... aDUH!

but ur right... the gulf is warmer, better for swimming, to take the kids for a nice picnic by the beach, nice white sands......

but it's just not the mighty Pacific.... it just aint the same! ;)

I would have to agree...

I'll take Mobile bay over that other bay on the left coast any day of the week.

War Eagle!!

pa56pa,

Actually Einstein, by definition a gulf is a large area of ocean enclosed by land, but thanks for playing. Your right it's not the Pacific, it's not cold as hell and you can actually enjoy swimming in it. I've spent a lot of time on both bays in question and they are both scenic and a pleasure to visit.
Do us a favor, quit being a jerk and only comment on things you have some actual knowledge of so the rest of us don't have to listen to incompetent drivel. FL 350 just said he prefers his bay. Way to show some class and try to insult him and his favorite bay without any provocation. Do everyone a favor and stay where you are too unless you can learn to appreciate other places for the qualities they have to offer; very cosmopolitan.

mmmmm.. short temper heh? was just "jabbin" with ya... too bad you gotta take these things sooooo seriously... you know... "War Eagle!"... LOLOL

Whoa Whoa Whoa! I'm takin this thing back!

For all you "Conebread" eaters out there! How bout Corn Pone?

Probably just the Southn' boys eatin that version of the mighty cornbread. Hot out of the skillet with real butter. Doesn't get in better whatever "Bay" you happen to be lookin at out the window.

he he... see av8or.... look what u started... lol

btw, i had mexican cornbread yesterday for lunch... from pollo loco's chicken..... i thought it was pretty good actually.. the chicken, that is.... it must be in the butter... perhaps they used margarine .... lol :D

Hey now, you're not gonna pin this on me!

By the way the butter....you put in On, not In, the cornbread, when it's served, not while you make it.

Just tryin to learn ya something! LOL

cornbread recipe

I'm no baker, but I do know that when you bake, butter is an ingredient.. and the type of butter used also makes a difference....

this cornbread recipe is taken from Martha's kitchen.. with roasted red pepper butter spread (which is what you meant..)mmmmm!

1 cup yellow cornmeal
2/3 cup sifted all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 stick (8 tablespoons) unsalted butter, melted and cooled to room temperature
1 1/4 cup buttermilk, room temperature
1 egg, slightly beaten, room temperature

1. Preheat the oven to 400°. When hot, heat an 8-inch cast-iron divided triangle pan in oven until very hot, 10 to 15 minutes.

2. Combine cornmeal, flour, sugar, baking powder, and salt in a large bowl; set aside. In another bowl, combine all remaining ingredients except about 1 teaspoon of the butter. Stir mixture into the dry ingredients just until blended.

3. Remove triangle pan from oven to a trivet or hot pad. Using a pastry brush, quickly coat pan with the remaining teaspoon melted butter.

4. Pour batter into pan, filling each triangle about two-thirds full. Bake until golden brown, about 20 minutes. Transfer pan to a wire rack, and cool for 5 minutes. Remove bread from pan, and cool completely on rack.

Roasted Red Pepper Butter
Makes 3/4 cup

1 red pepper, roasted, peeled, and seeded
1 stick (8 tablespoons) unsalted butter, softened and cut into small pieces
1/4 teaspoon salt

1. Place roasted pepper in a small food processor, and pulse until smooth, about 30 seconds.

2. Add butter in batches, and process until just incorporated but not separated, about 30 seconds. Add salt, and pulse to combine.

pa56pa,

Fair enough. It has been a long day and it never has hurt (well rarely) for me to have a few New Castle's. I do appreciate the "War Eagle!" I will digress and allow the "cornbread" thread to continue. BTW, AV8or, have you ever really eaten squirrel or are you just having a little fun with this thing? Just curious. Tailwinds.

Yes, I have eaten squirrel, when I was a kid. One of my first hunting experiences and the ethic of eating what you kill was instilled. It really IS pretty good it's just not worth the effort. I'm pretty much a bird hunter now. Quail, dove, duck. I do kill a couple deer a year for the freezer, but to be quite honest, deer hunting is not my favorite hunting. We just prefer the meat to beef. Much healthier and when dressed and cooked correctly, I think tastes better.

I'm fairly well educated, but if you cut me to the bone I'm still pretty much a "good ole boy".

The difference between a good ole boy and a redneck.....

Good ole boys raise livestock....Rednecks have an emotional attachment.

Oh, and just for the record, I'm not racist, since that is sometimes the assumption with us GOB's.
