As a former A-10 pilot we had 3 radios, two of which we could easily talk on by a button on the throttle, forward for UHF, aft for VHF. In my 2023 CubCrafters Carbon Cub FX-3 with a G3X glass panel and two radios (GNC 355 COM1 and GTR 20R COM2) I have to go through screen taps to change radios I'm talking on and of course can control which I'm listening to, but typically both.

Some use COM2 for air to air such as "fingers" and COM1 for ATC/CTAF, etc. It would be much nicer to have a forward/aft selector on the throttle/yoke/stick that would allow the same but I wonder if Garmin is even capable of this? Can a MIC be activated by a physical switch instead of having to change config on the panel?

That depends on how the remote audio panel is wired. I don't have a remote audio panel and, when I install my GTR 20 as COM 2, I shall also fit a MIC SEL switch and possibly also one for the rear seat.

When configuring this you have to consider PTT routing as well as MIC audio routing.

I'd suggest a review of the audio panel installation manual. There may already be provision for one, or two, remote MIC SEL switch(es).
 
There is support for a "COM SWAP" input discrete but, unless I misunderstood, there is no provision for having front and back seat transmitting on different radios. That capability is provided in some other audio panels.
