I lived in what they call Uptown for 3 years. Don't ask me why it's not called downtown, but not much makes sense in Charlotte as far as planning as you will quickly learn if you try to drive around that city.
The nightlife in what we will call downtown is excellent. The ladies are plenty and very attractive. They are also quite friendly. Don't worry if you're from the north, I moved there from Chicago and fit in right away. Some places you might want to check out are Dixie's Tavern if you like Cajun eats, The Fox and The Hound for a good chill out atmosphere, Buckhead's (as mentioned before), Liquid Lounge for more club atmosphere and good looking ladies, Time Lounge is clubby with some hotties but is dressy and can be snooty. Stay away from Bar Charlotte and Have a Nice Day Cafe. Pretty cheesy. There are lots of other places that have opened up recently after I moved away that I've never visited that I'm sure are quite good.
If you head up to Concord you might want to check out Concord Mills. There is a Jillians's there that combines beer, video games, and cosmic bowling. There are also all kinds of other shops and places to eat. It's about a 15-20 minute drive up I-85. The gold mine that was mentioned was Reid's Gold Mine. Not a place I would go solo, but it was neat to see with a date.
Make sure you get a Creative Loafing as soon as you get in town. It will list all of the events going on that weekend and it lists lots of good restaurants, bars, clubs, and live music in town.
