Airplane single engine land and airplane multi engine land will only add to total time if you don't have any other category/class divisions in your logbook. If you have experience in balloons, gliders, helicopters, single engine seaplanes, etc, then you must also include this experience when adding to equal total time.
Pilot in command, second in command, and other time (usually classified under "instruction received," or "dual") should equal total time. You're best off only including as "dual" anything that can't be classified as PIC or SIC.
While you can be acting as PIC and logging PIC while receiving dual, it's best to only total as "dual" that time which can't be classified as PIC or SIC.
If you provide a breakdown of your aircraft times, these should add to equal total time.
