I instructed at UVSC for 2.5 years.
It is accredited, I have no idea why anyone claims otherwise.
If you want to get your ratings, instruct, and move on I would, however, direct you elsewhere.
The way things work for CFIs there is always in a state of flux, and doesn't seem to ever improve. Bottom line is that there are too many CFIs for the number of students. Yes, people move on to the airlines (I did), but I think you could do things quicker elsewhere.
If time is not an issue, then my points are not important. I was always upset by how little I was able to fly, even as a 'senior' CFI with all the ratings, Gold Seal, etc. I have friends who got to regional mins much quicker elsewhere.
As for the classes, I didn't attend UVSC. I did have students comment to me, however, that they were unimpressed with the online classes and didn't feel like they learned much. As their instructor, I could see that as well.
