Is pay any different?

Well, you don't get paid for the trips you drop. However, you accrue seniority and time towards retirement. Most folks can make more serving in the military Reserves as an O-3/O-4 than the airlines pay, especially at the leagacies and probation year at FEDEX/UPS and SWA.

But if your guaranteed 75 hrs but only fly 50 do you get the same pay? It seems that overtime helps a ton.
