Anytime you add both digits of a two digit number together and subtract the sum you're going to get a number that is a mulitiple of 9. If you look at the chart you'll see that all multiples of 9 (18, 27, 36, 45, 54, etc) are all the same symbol. :)

yeah, but almost all of them are irrelevant and put there to distract you.
If you follow the little math exercise you will come up one of only nine possible answers. All 2 digit combinations in which the first number is 9 will result in 81, all combinations in which the first nunber is 8 will result in 72, and so on.

All possible combinations will result in either 81, 72, 63, 54, 45, 36, 27, 18 or 9.

If you look at the chart, the same symbol is assigned to all of those numbers. when you try it again, you get a different chart, but again all those possible results have the same (but different from the last chart) symbol.

Except you subtract the sum of the two numbers, not 10, and it displayed other symbols besides the smiley face.

Ah, now I get it. They keep changing the chart.

Yes, I stand corrected. I have no idea where the 10 come from. The chart changes the symbols around everytime you redo it.
