Check and see if Hart Air is still in operation at LGB. The used to have a Citabria, Decathalon, Extra, and Pitts. There also used to be an operator at SNA that taught tailwheel in a Cessna 170 and Cessna 180. There was also a school out in Santa Paula that did tailwheel training in various aircraft.
 
Hart Air is no more. They were bought by some school in LGB (can't remember the name). I think they currently have a Great Lakes on line.
Sunrise would probably be your best bet.
