Our POH calls for turning the fuel pumps off during single engine taxi in order to prevent a fuel imbalance. How does that affect the possibility of an imbalance?

From what I understand, with both fuel pumps on and single engine, the fuel is being pulled from both tanks. But, the unused fuel is returned to the onside fuel tank. The reason the fuel tank on the operating side will get heavy.
