Way back in the dark ages (you know, like five years ago) I worked at Nassau Flyers. Mostly great instructors, airplanes that all date to the 70's but were usually free of mechanical issues, and some of the highest rates on the airport. I think it's the "senior" flight school on the field and has a good rep for quality instruction and for turning out good pilots, but it will probably end up costing more than the others when you finally get that ticket. Remember, there is a reason they've been around for over 20 years: They have a good product. I think their website is www.fly-nfi.com.
Remember, though... No matter what school you choose, Republic is a very busy airport in a high-density traffic area, you're going to spend a lot of your hours sitting in line for takeoff, extending on ten-mile downwinds, and waiting to enter the airspace from the practice areas both north and south (esp. south). If you can take lessons during the week you'll be doing yourself a HUGE favor. Many are the times I was number 12 or so for callback returning from the south shore at dusk on a sunday.
Republic is also an airport that's staffed with a very, umm, "understanding" bunch of controllers. They know that probably one out of two people in their airspace are students and they do watch out for you better than most.
