SouthWest Airlines (and other low cost airlines) has made itself comfortable at
many Legacy hub airports to the point that the Legacy airlines' major profit
comes from international routes.

That said, it would seem the next logical step would be for SW to start a
seperate airline with similar business practices (like single aircraft type)
but for trans Atlantic or trans Pacific routes with a B-787.

Just a random thought.

Possible?
Probable?

I doubt SWA will do it. They know what works, and they continue to do it year after year. There is still a lot of the continental US that they don't serve. They just entered Philadelphia and Denver. Lots of large and mid-size cities to go. Plus, they've just entered into code share with ATA to offer international flights.

However, I bet JetBlue will try it in less than 5 years. International Routes are the last fortress of overpriced legacy airlines. I expect competition for those routes will arrive from Europe before it does from the US.
