I have a single engine instrument rating and I am currently working on my multi-instrument. Can the approaches and holds performed in my multi training be used to satisfy IFR currency requirements since I am not logging the multi time as PIC?
 
Sure. The currency reg doesn't say anything about being PIC or rated in the aircraft in order to count an approach that you fly. (And, although your questions suggests you know this already, approach currency is category, not class, specific.)

Thanks, I understand that currency is specific to category but the PIC thing stumped me.
