How important is your logbook. Ive been at my regional for many years and can't wait till 65 !! Do I really need to keep track of my actual inst time ? Or the amount of night flying, sounds pretty stupid if you ask me ?

You don't have to keep track of anything if you don't want to. If you even think there is a remote possibility that you will ever interview again you probably want to keep a complete, neat logbook.
 
Go fill out your application at the airlineapps.com website. That is what most airlines use as an application. There you will see the flight time breakdown they will have you complete. It is pretty picky.
