My own 707 sim check went OK. I had a buddy with mega-time in a KC135. All mine was small and fast. The guys running the check understood the difference, and flat-out said "We know you don't have time in heavy AC. What we are looking for is a cross-check, and a continuous and positive correction when not where you want to be. Guys with 1,000 hours in a KC135, we expect near flawless performance."

Sure enough, the poderous roll rate took me by surprise, I overshot (not grossly) the turn to the ILS, but corrected well, and overall flew a decent sim.

One other apparent function of the sim is to weed out obvious posers and guys with bogus resumes. Someone with a log full of turbine time should know how a turbine engine operates, for example.
