Question: When jumping on international flights, how early are we to be listed on the flight? I have heard 24, 4, and 2 hours.... which is it?

depends on the airline. On us airways you can do it during check-in. Same with Continental, though I believe they require a stby ticket (e.g. ID90) and you need to call 800 number and list yourself before talking to the ticket agent.
