I was flying west into the sunset the other day and I wondered how fast do I have to go to make it come back up? 210Kts won't do it....

Depends on how far north you were.

Earth is 22,000 and change around the middle. 24 hours in a day. Makes it a little under 1,000 mph at the equator. I've heard the figure of about 500 mph for the U.S.

I think finding the exact answer for your lattitude would involve calculus. Icky.
 
I heard from a Lear captain that an East to West flight would hold the sun in place with the right winds. But I don't know how true that is.
 
Why would you want to have the sun in your eyes the whole time. I have a hard enough time getting the charts unfolded and positioned just right!!!
 
I agree, why keep staring at "5 minutes to go to beer O'clock"
