Where would I go for this? Who uses winches/autos and is willing/able to train someone not in their club?
 
How long ago was this? One of my friends is heading down there soon and should get his while there.
 
I know of four winch operations. All clubs. OR,AZ,CA(2).

AZ(prescott club is the cheapest) 200.00 buy in. 5.00 a launch.

I doubt you will learn much from Estrella's suburban method if you will be using a winch. Just my thought. I have auto towed, as well as winch launched. I think they should be diffrent endorsements.
 
There was a soaring club with a converted station wagon with a spool for winch launching that came to my little airport in Johnstown, NY many years ago. My first flight in a glider had a 200ft cable break! They gave me the piece of wire they had to cut out to resplice it for a souvenir.

I think it was the Mohawk Soaring Club out of Pittsfield, Mass, but it may have been one of the clubs around Saratoga, NY. Check with them.
