I was just flipping the channels, and saw a segment on a show where Joan Lunden got to fly a G-V. Right before they showed one of the demo captains sitting in the seat wearing a sweet kneeboard (snicker :p ) they showed something to the left of the seat that resembled a collective lever in a helicopter. What was it?
 
If the G-V (550) had the Epic avionics package in it, what you saw was the cockpit control for the EFIS. I'm not sure what Gulfstream calls it, but on the Falcon EASy, it will be the CCD (cursor control device or something like that), both located on the aft portion of the center console.

I saw the show about a year ago and it was a straight GV not a G550. They were talking about how it cruises higher than other jets, FL510 so they showed Joan and the pitch limit indicator was on steady the whole time, at least .70 AOA. The gulfstream guys, (the one with the cool kneeboard), pushed the airplane where it didn't want to go just for the show.
 
That stick on the side was the controls for the avionics. They showed him selecting different things and showed all the EFIS changes etc...
 
If she was in the left seat and it was big enough to look like the colective of a helicopter it was probably the tiller.
