How is it up there primarily for flight instructors?

Any good/bad FBO's to go to/avoid in the Minnie metro area?

I think that the market is a bit tight for CFI's around MSP right now. Things tend to slow down a bit when the weather turns cold.
I would call or send a resume to most FBO's in the area and see what you can get.
I know that the small ones especially just want to keep their fleet flying, so you might be able to start P.T. somewhere and work yourself to F.T.
