So I'm looking at getting my 737 type rating for Southwest. Does it matter if you do the type for the 300-500, vs the NG 7/8/900?
 
Nope, doesn't matter. However, the 300-500 have VERY different panels than the NG birds. The 300-500 have very basic EFIS (ADI and HSI/NAV tubes, so that might be an easier learning curve for you than the fully integrated NG panels.

You can do a search on airliners.net or other sources and take a look at the panels.
 
the 737 is one type rating, you just need differences training between the adv., classic and NG A/C
 
The ng's are alot more expensive plus southwest has their own configuration. I got mine in the -300 with -200 ground school and I was fine nobody in my class at southwest had an ng class prior to ground school. That beeing said class vas verry fast and they expect you to know the 737 prior to school. If I could do it all over again i would have tried to get the -300 ground school and sim. from what I hear K and S also teaches SW flows and procedures and that is the biggest hurdle to overcome here.
 
737 Type

As previously stated the 737 type rating is just that 200,300,500,700,800 and 900. The NG training is differences only. The only important thing is having no limitation on your type ie VMC circle only. SW wants no limitations on the type certificate. Good Luck I did mine at CPT in Houston. They use Continental Facility and 737-500 EFIS sim. Pretty Good Program with good examiners.

Ummm this is drect from the SWA employment page:

1The only restriction SWA will accept is "B-737 CIRC. APCH. - VMC ONLY"
