I don't know of any a319/320 that only has 1 jumpseat. I think they are only made with 2.

Untrue:Spirit 320's, new 321's, and 2 319's are one seat. All of the rest of the 319's and the older 321's have two cockpit jumpseats. When you go online to list for the jumpseat it will show what the aircraft has, one or two.

Not having 2 flight deck jumpseats in an A-320 family airplane is like not having an ATM in a strip club--- just doesn't seem right.

I'm surprised airbus even offers only one jumpseat as an option

Allegiant 319's have only one jumpseat. No extra F/A jumpseats either.
