I beleive it is set up by the individual authorization recieved. At my company, 1 Cat ii/iii per 30 days is required to maintain currency. We do all operations below Cat I as autolands, so we just autoland once a month to check the box. In 3 years, I have only done 2 approaches lower then Cat I in actual. FWIW
Currency has to be established by the operator. it's part of the approval process.
With us it's -completed the low visibility items during the last "operators proficiency check (i.e. 6mo checkride)
AND - one practise or actual approach using CATII/III procedures during the 6 months prior to the flight.
We actually do quite a bit of flying with fog, so I'm, logging about 4 CATIIIa approaches each winter........ thinking about it, the summer has been nice, time to do another practise approach soon!!
