Howdy!

I'm helping out at a SAREX next weekend by giving Form 5 checkrides. If the pilot does not desire a BFR or IPC signoff, do you log the time under any FAA category?

The aircraft checkouts I do for the flight school are considered "dual given." Is this the same?

Yep, just log it as dual given for you, recieved for them if they don't want an IPC, or BFR... I see no reason why they would pass up the opportunity though.
 
Form 5

Just log it as "Initial (or Annual) Form 5 Satisfactory" if they don't want a flight review. You can always add "BFR Satisfactory" to that write-up if they opt for one. I'd log it as dual given in your examinee's and your logbook as dual given, because you are acting as a flight instructor according to Part 61.

I was an Assistant Chief Check Pilot in Oklahoma Wing and a squadron check pilot in Arizona Wing. I gave a ton of Form 5s and loved every minute of it. I always, always offered a flight review signoff and was never turned down. I can't remember offhand if I'd put instrument-rated examinees under the hood and shoot an approach back to the field so I could write up a comp check (IPC) for them, but I must have. In the late eighties, ICC requirements were much less stringent than they are now.
