I've never flown there, but I hear great things about Michael Church at Sunrise Aviation down in Orange County.
Attitude Aviation at Livermore has a pretty good selection of aircraft too. I've flown with them a couple of times, but not in their "hard core" aerobatic stuff.
If you'll be in Sacramento area, Tim Decker (www.timdeckerairshows.com) gives dual in his Pitts S-2B at Lincoln Airport. I've flown with him a few times.
I'll second the nod for Sunrise Aviation. I taught at Sunrise years ago; some of the best course curriculum out there, especially for aerobatics. Their fleet is diverse and maintained very well. We used to have an Extra 300 and a Pitts S2B online for rental (along with a Cap-10 and numerous Decathalons).
Sunrise has trained many military aviators breaking into the civilian world and always received rave reviews for the training standards. I don't think you'll find a more competent aerobatics instructor than Michael Church; he's one of the best.
