Aww... See now you lost me, great BBQ isn't about the sauce, its about the smoke (wood smoke that is) and seasonings!
 
I like good smoke! Misquite that is! Some BBQ sauces can overpower the flavor of the meat, IMHO. Same with a good steak.

You are right! Have you tried Hickory??? Or even Applewood...

Man I'm gonna have to roll my smoker out into the snow and fire that bad boy up!
 
I take some Hickory chips, soak them in Pale Ale beer long enough to permiate the wood (don't let them get soggy). Put bowl in the bottom of the smoker, add about 1/2 bottle of beer, my favorite herbs/spices, water. On the mid-rack, a slab of baby back ribs, on the top rack a salmon steak (about a 2 lb slab) and a duck on the other side. By evening, OH MY!

Hey guys,
I'm new to this board myself, and am about to change careers into aviation. I enjoy the hell out of reading the posts here, as they're very inspiring to me.
I just had to pipe in when you started hitting on a sensitive spot. I live in Austin (actually, a little north in Leander....but it's the same) and I'm drooling now profusely. See, I've been stationed in Kuala Lumpur, Malaysia for almost a year now and have not tasted BBQ in that time. Anything. The Salt Lick, Pok-E-Jo's, Rudy's.....man I gotta stop. Just the thought of driving out to the Salt Lick with igloo full of "personal beverages" and sitting down at one of their picnic tables on a spring evening....and CHOWIN' DOWN. I believe I've slipped into self-torture here. Must.....stop.
Anyways, we're due to fly outta here on 3/22, so time's short now. The wife and kids feel the same as I do.
Once again, FalconCapt, 2000Flyer and the rest, I really enjoy reading your posts. Keep 'em coming.

youre right, its not about the sauce. its abou the meat and the seasonings...but i cant help it. grew up near KC and downwind from several good brickhouse pits of great cooking.

so this means im not qualified anymore?

BBQ

Here in North Carolina the BBQ joints to eat are the ones with an outside pit and the newest car outside is 1975,not a BMW. Had some last night. Mobs
