It's obvious that other airlines have exemptions from some or all of these items, because some airlines use laptops in flight. That might also mean that this list does not apply to crewmembers, jumpseaters, XCMs, ACMs, XFAs (did i miss any?)
Yeah, I've seen that list too, a similar list is in our ops manual at my company. However, you're required to use the aircraft's laptop to compute the weight and balance. Since some pilots don't have the patience to wait for it to boot up, they'll leave it running during the flight so it can be quickly available for the next leg.
In my experiences, I've never seen or heard of an electronic device (camcorder, shaver, computer, etc..) causing problems with the instruments. However, what I do see almost every day, is if there's a fuel truck by the right wing, the compases will be in disagreement due to the interference of the metal truck in close proximity to the flux valves (wingtips).
