Anyone able to reccomend any good books dealing with weather, METAR's, prog charts, etc.

Pickup Aviation Weather Services (AC 00-45). It's published by the Govt.

Also take a look at Aviation Weather printed by Jeppesen for a good theory text that doesn't get too involved into things like math and fluid dynamics.

Sparky Imeson's book Mountain Flying has an excellent section on weather, the best I've read. Also, Bob Buck's Weather Flying is a classic. Good luck.

The Gleim book is the best, it combines the two major FAA ACs about weather theory and weather services available to pilots.
