"During 2003 Star Air and UPS entered into a new contractual agreement for the next 10 years. From 2005 Star Air gradually placed 11 Boeing 767SF (Special Freighter) in service with UPS. The 757PFs was returned to UPS.
When A. P. Møller - Mærsk in 2005 sold Maersk Air, Star Air remained as an independent entity within the A. P. Møller - Mærsk group. About 175 are employed full-time - most mechanics and pilots are based in Cologne, Germany, where UPS has its main European hub."

thought the likes of UPS (and Fedex?) held outsourced flying to just the
C-208 and Shorts/ATR type ops.

This is a byproduct of not the US not having complete freedoms of the air with EU nations. Star flies to destinations UPS isn't allowed to, although how much of that is schedule manipulation vs. lack of rights remains debatable. We will see what happens in 2013...
