Another accelerated training program that I know of is Shebles in Kingman,AZ. There are mixed opinions about that flight school, but they seem to get the job done quickly.
There is no reason why you shouldn't be able to get both done within a month if you're able to be at the airport around 4 or 5 hours a day. I did things a little differently than most and got my MEI as my initial, so keep in mind that when I got my CFI/CFII done in 27 days at a regular FBO they were add-ons. But most of the question can be answered by yourself when you evaluate how hard you are willing to work on your own as far as the lesson plans/FOI/ground portions of what you need to know. I strongly suggest working your tail off in a quiet cubicle compiling lesson plans and knowing the ground/FOI stuff cold before you even pay for an hour of ground with someone else. If you do that you won't be paying anyone to read the regs for you and your training $ will be more wisely and efficiently spent.
