Log it and don't worry about the tech questions. By the time you are ready for an interview, just tell the interviewer that you have flown other planes and can't remember the particulars of the commanche. Hell, I fly a bunch of planes and have to constantly look for the numbers in the books.

Yeah, where does this come from that if you log PIC in an airplane that you will have to remember technical facts about it in an interview?...

Maybe...maybe if all you've ever flown are training planes getting your ratings, then you log a bunch of high perfrmance/complex time in a "Flash 360", then you should probably be able to talk technical about that, but once you start flying a bunch of different airplanes, nobody expects you to know/remember technical details. They do expect you to know where to find the info in a POH of the airplane, and that would jog your memory.

Logging time

I got to fly in my friends "new" Piper Commanche 250 last night on a two hour VFR night cross country. My friend who already fly’s a CJ let me do all of the flying with his guidance . . . . I wasn’t sure that I could log it. I have a CPL/IR ASEL, Complex and High performance endorsements . . . .
(emphasis added)

Absolutely you can log it, as PIC, single-engine, high-performance, complex, night, and x-c. You do not need a formal checkout in the Commanche to log time in it.

But, I would say that if you get substantially more time in the airplane that you may be held responsible for its technical details at an interview.

They won't care if you don't know the details if it's a plane burried deep in your log book. However, if you're checked out SIC and got 100 hours logged in the last 60 days you better know.

I was at my first interview at a regional and they asked me

"so how many pounds of gas does that BE-99 that you fly hold"

I shot back "A B or C model"..."okay C model"...

"with or without the extended range conversion"..."with"...

"2,160 lbs!" (or some other WAG)

The interviewer moved on to the next question...I got the job...I couldn't remember for the life of me how much gas it could hold. We always had a standard fuel load and never had to "top it off."

As previously noted you were the sole manipulator of the controls of an aircraft for which you were properly rated. Therefore you may log the time, including logging PIC, etc

Logging PIC is not exactly the same as acting as PIC. But even if your friend (the owner) was really the PIC, you get to log the time of you were the sole manupulator of the controls and you are appropriately rated

It is not legal for you to log this flight time unless your friend is an MEI. You are NOT rated in that aircraft. You need to have your multiengine rating to log it. You were sole manipulator of the controls but you did not have final authority to the flight. You can also not fly with passengers. I've heard of people getting screwed on interviews with stuff like this. Is 2 hours of multi really worth it????
