Example: Who manufacturers the fuel pumps on a 737? The hydraulic pumps? etc? Obviously Boeing assembles the aircraft, but who builds the parts?

Where could I find that information? The specific manufacturers of specific parts for any aircraft.
 
Very seldom does the aircraft manufacturer build small component items such as fuel pumps, landing gear, hydraulic components, wheels, brakes, avionics, blower motors, windshields, etc. They usually farm this out to companies that specialize in this sort of work.

The aircraft illustrated parts manual usually for the platform has a chart near the front that has a list of the component manufacturers on it,

The IPC's that I use have a vender code section in the front and in the figure item number section it is listed for a particular part.
