How about a public works project to create a letter of reference for a former CFI. Very generic in nature so it can be used as a sort of template.

I'll start, Obviously I've just plugged in random dates etc...
Lets see your edits...

RE: John Doe

John Doe served as my flight instructor from January First of 2004 to February 25 of 2004. During that time I received training for an instrument airplane rating and successfully passed an FAA Administered practical test on March First.

Mr. Doe was professional and through, while at the same time providing an enjoyable experience. Mr. Doe showed excellent skill in evaluating my needs and presenting information in way that was easy for me to understand. Without hesitation, I recommend him personally and professionally to ant organization. I know him to be thoughtful, patient and enthusiastic in his approach.

Dear Madam or Sir:

RE: John Doe

John Doe served as my flight instructor from January 1, 2004 to February 25, 2004. During that time, I received training for an Instrument Airplane rating and successfully passed an FAA-administered practical test on March 1, 2004.

Mr. Doe was professional and thorough, while at the same time providing an enjoyable experience. Mr. Doe showed excellent skill in evaluating my needs and presenting information in a way that was easy for me to understand. Without hesitation, I recommend him personally and professionally to any organization. I know him to be thoughtful, patient and enthusiastic in his approach. I would be pleased to have Mr. Doe as my flight instructor again.

Yours truly,

Biff Spiff

I like the tone of the letter. It just needed a little proofreading. I just wanted to add the last sentence.

Whoops! :D

I know a guy--former AH-64 driver--who sent out a flurry of applications to all the majors...only to discover a week later that his resume described his extensive experience with Army fright testing.

(Damm spell-checker!)

I agree with Bobby about that last sentence, by the way. Great letter. Very professional.
