I had a CFII/MEI but let it lapse - to reinstate all three do I need all three rides or just one with a DE.
Oh and yes, I'm to lazy to look it up.
 
I feel your pain...I let mine expire a couple of years ago. Pretty stupid considering how much all 3 ratings cost me and how much teaching I did with them. Anyway, you only have to take one checkride to get all 3 back and I think that the checkride that you take is up to you. CFI, CFII, MEI etc...
 
Sgt. Hartman is correct. All that is required is called a single showing of proficiency and it renews all CFI ratings. Plus the ride can be taken with a DPE.
