I like to read about aircraft specs for all kinds of aircraft online. I know a lot for an aviation beginner and can generally read and understand most spec sheets for GA aircraft. The only thing I'm not sure about is Useful Load. I understand that it is the difference in Gross and Empty weight. What I don't understand is if useful load has fuel weight already added in or not.

Does the weight of the fuel still need to be subtracted from the Useful Load to know how much weight an aircraft can carry on a full tank?

Gross weight: 1800lb
Empty weight: 1000lb
Fuel capacity: 50 gal
Useful load: 800lb

If the fuel weighs 300lb, can I only carry 500lb of passengers and baggage, or is the fuel already considered in the gross weight?

You are correct in your assumption. You must subtract fuel weight from the useful load to get the actual passenger/cargo load.
