Look for a software called "un-pdf"...it has a 30 day free trial and even if you decide to get the whole program it is much less than a full version of pdf and actually works better for this purpose.

The software converts the pdf file into a word file where you can manipulate it using ordinary word tools and then convert it back or print it. It worked reasonably well.

If you have Corel Draw or something similar I think that would probably be the easiest way to do it.

I am no Adobe wizard by any means, but I think you have to have the full Adobe software to be able to manipulate the application. If you have just the Reader, which is all I have, it comes out as a scanned document. With that being the case all you can do is print it out unless you have other software that you could copy it to in order to change things. Others who know more may be able to elaborate on that but that's how I see it.
The PDF document they provide is not a form, therefore even Adobe Acrobat Pro can't manipulate it. The best way to edit it electronically is with Adobe PhotoShop (Full or Elements).
 
For your cover letter, really emphasize your customer service experience (assuming you have some), they are looking to hire someone you as excellent customer service and people skills who also can fly airplanes. at least that's what I did, and friends of mine that have also been hired tried to emphasize.
