I am working on my Inst and am aware that sim time can't be logged as flight time, but I am unsure as to log it as multi (ATC 810 Navajo). I have read that it is only "sim" time and nothing else. I don't think logging it under MEL is a good idea (which is what my instructor advises). My logbook entry would be "sim" and "dual" (I don't have my multi yet). Does this sound right?

You have it right. An FTD is not an aircraft of any kind and time in one should not be logged in any column tallying aircraft or flight time.
