Can a flight instructor log dual instruction given when providing instruction in an approved simulator? Just curious, this seems to be a gray area that people are unsure of.
 
I'm not sure what's grey about it.

61.1(b)(12)

Pilot time means that time in which a person -

(iii) Gives training as an authorized instructor in an aircraft, flight simulator, or flight training device.

(And, no, you =cannot= log it as PIC or =any= category of "flight time")
