I am having a little difficulty understanding the METAR and TAF coded forcasts. I am also finding it difficult to understand some of the weight and balance concepts. Is there a CD or DVD that can help me better understand these concepts?

Chapter 7 in the AIM will give you guidance in decoding METAR's and TAF's.

Post some more specific questions about weather reports and W&B concepts. Perhaps we can offer more concise and intuitive answers. Sometimes those books keep their explanations too short to produce any meaningful correlation or understanding.
 
If you have DUATS (it's free) you can request various weather reports in both FAA code and plain language. Once you have both, you can compare them side by side and see how each code is converted into meaningful data.

www.aviationweather.gov (it's .gov not .com)

This site also has the ability to provide both types of translations.
