I have been racking my brain on this for hours. On the jepps airport diagram, how do you tell how much runway you have left from departing at an intersection. Is this info only at certain airports? or is there some secret alien symbol that jeppesen incorporated that only interviewers know of?

I don't think you can - I think that's why ATC has to tell you how much runway remaining if they assign you an intersection departure (or put it on the ATIS).

Was that really an interview question? Wow - another job I wouldn't have gotten, the list grows longer.....

I think the closest you can get is the back side of the 10-9 page. A chart lists the useable lengths beyond the threshold and glide slope. The intersection lengths are usually a part of the performance data that is provided to airlines by a 3rd party.
 
Geez, I don't think I've seen that either. If it is an interview question, the correct answer is to find the number in the runway analysis manual. Some airlines / airplanes will have data for intersections, others won't. Thats the way you will be sure or not if you can accept an intersection for departure.
