Lets say an employer wants you to sign an employment contract for a multi engine night cargo job where you agree to not send out your resume or seek other pilot employment during the first 6 or 12 months.

Is this legal?

Sure you don't have to sign it and you don't have to take the job.

Sure you can sign it, take the job and send out your resume and look around anyway... who's going to know?

How many people would look around anyway if they signed this? After all you want to have something lined up when your 6 or 12 month commitment ends right?
 
Yes, the contract is both legal and, therefore, enforcable. There is an offer, acceptance, and consideration.
