If I have done a multiengine IPC does that cover my single engine privilages as well?
 
Yes.

61.57(d)(1)(i) stipulates that the proficiency check must be in the same category of aircraft. In this case, airplane.

You are covered for single engine airplanes and multi engine airplanes, if you already hold instrument privileges in each class of aircraft.
